Microgreens as a new crop, have not been studied or analyzed extensively. It is difficult to predict how long a person can store Microgreens.
Microgreens are perishable and do have a short shelf life. There are at least three factors that affect the shelf life of Microgreens:
- storage temperature (humidity and light)
- packaging and air mix.
- harvesting (cutting, washing, drying)
Each of them can affect the Microgreens’ shelf life from about 1-to-2 days, 5-to-8 days, 10-14 days, or even up to 21 days.
Short Shelf Life Plants tend to respire by using up the sugars produced via photosynthesis plus oxygen to produce energy for growth.
Respiration happens to be the opposite of photosynthesis.
Unlike mature plants, Microgreens respire during the germination process.
At 4°C (39°F), the shelf life for some Microgreens can be about 14–21 days. It is necessary to turn the temperature up 6°C (11°F) and thus shelf life is reduced by 50% (7-10 days).
The bottom shelf is the coolest part of one’s fridge. Keep the Microgreens are placed in an airtight container to keep them fresh and free from spoilage.
